Just one set of Philipsburg Manor’s millstones weigh around 4,100 pounds, so they generally don’t get out much. Nonetheless, the daily grind wears them down just the same, hence the need for dressing, and not in haute couture. Stone dressing refers to work millers carry out on the surface of millstones so they will more efficiently and cleanly do their job of cutting grain.
