Although
compiled during the nineteenth century, this handwritten cookbook includes
recipes for Dutch foods, including "olicooks," doughnut-like confections.
Washington Irving placed them on the bounteous Van Tassel table in the
Legend of Sleepy Hollow as representative of traditional Dutch
cuisine. The survival of Dutch foodways illustrates the cultural mark
left by New York's imprint group.
