Ingredients
1 cup
yellow cornmeal from the mill at historic Philipsburg Manor, Sleepy Hollow, NY
1 1/2 cups
all purpose flour
3/4 cup
sugar
1 tablespoon
baking powder
1 teaspoon
salt
2 cups
buttermilk
2
large eggs, lightly beaten
1/4 cup
vegetable shortening, melted and cooled
Instructions
Preheat oven to 400 degrees F. Grease an 8" baking pan and set aside. In large mixing bowl, combine cornmeal, flour, sugar, baking powder and salt; stir until well mixed. Add buttermilk, eggs and shortening; mix until smooth (about 1 minute). Pour batter into pan. Bake 30 minutes (until lightly browned). Can be served with fruit and whipped cream.
