Ingredients
2 cups
fine yellow cornmeal from the mill at historic Philipsburg Manor, Sleepy Hollow, NY
1 tablespoon
salt
1 cup
cold water
4 to 6 cups
boiling water
Instructions
Mix the cornmeal with the salt and cold water so that it does not become lumpy. This is done in the top of a double boiler. Put it over simmering water and stir in the boiling water, 4 cups at first. Cover and cook 30 minutes, stirring occasionally. When necessary, if it becomes too thick, add more boiling water. Polenta thickens as it cools. When it is done, spread it 3/4 inch thick on a slab to cool and thicken. When ready to serve, cut in oblong slices, 2x5 inches.
