Ingredients
1 cup
cornmeal from the mill at historic Philipsburg Manor, Sleepy Hollow, NY
3/4 cup
sifted flour
4 teaspoons
baking powder
3 tablespoons
light brown sugar
1 teaspoon
salt
2 tablespoons
melted butter
2
eggs, beaten
1 cup
cream
Instructions
Sift the dry ingredients together. Mix the melted butter with the well-beaten eggs and cream. For ordinary purposes, use light cream; for special occasions, heavy cream makes a rich and lovely bread. Combine the two mixtures and bake in a greased, floured 8x11 inch cake pan about 20 minutes at 350 degrees F. Serve hot with sweet butter.
